The new knife set from Lilienstahl combines four essential Japanese-inspired blade shapes—sujihiki, santoku, gyuto, and petty—in a high-quality collection designed for discerning chefs.
Each blade is made of HK torsion damask steel, a hand-forged, high-layer material created from a single strand using a unique torsion process.
This process step produces a fine yet coarse-looking twisted layer structure that enables a hardness of 63 HRC.
The handles are made of black ebony, a dense, polished wood stabilized with a natural oil base, which ensures durability and a pleasant feel.
This is complemented by bronze handle clamps, which enable a semi-integral construction: the blade flows seamlessly into the handle, optimizing hygiene and balance. The pewter bronze also has an antibacterial effect. The oval handle design is ideal for the pinch grip—a precision grip with the thumb and index finger directly in front of the ferrule—and thus offers ergonomic support during intensive use.
